Healthy Recipe of the Week - Chicken Souvlaki Lettuce Wraps

Frankly, I miss nasty carnival food sometimes, but this weeks recipe can cure the craving for a big fat naughty gyro. I realized, after I made this for the first time, that I was not missing the gyro itself but the yummy (and healthy!) tzatziki cucumber sauce.

What you will need:
1lb Chicken breast or chicken tenders
Red wine vinaigrette (to marinade, optional)
lettuce
feta cheese
tomato
red onion

Tzatziki Sauce:
1/2 cup cucumber, peeled and shredded (squeeze out water in cheese cloth)
1/2 cup non fat Greek yogurt
1 tablespoon lemon juice
1/4 teaspoon salt
1 garlic clove, minced

Marinate chicken for at least an hour in red wine
vinaigrette(or marinade of your choice.)

Mix together ingredients for the tzatziki sauce and let sit in the fridge for at least an hour.

When you are ready, toss chicken on the grill.

To assemble, tear off leaf of lettuce, fill with Tzatziki sauce, feta, tomatoes and red onion. Add chicken. Enjoy.

TIPS:
*this sauce is a great dip for vegetables
*also, try the sauce on a salmon burger!
