CHOCO-COCONUT PROTEIN BROWNIES

The best thing to do before going to the gym is being prepared instead of going with no clue of what to do. In my opinion, the same applies to nutrition - knowing what you are going to eat to help fuel your workouts and to have energy throughout the day is very important.

I like to pick one day (Sundays) to get ready for another busy week. I make a list and head to the grocery store to buy only what I need. This day I like to prepare foods like baked oatmeals, protein bars or mini venison-turkey meatloaf muffins for my small meals.

*Preparing your meals helps to avoid playing the"guessing game" which makes you start nibbling on little things or eating without moderation.

During the week, I might come up with a new recipe. With that in mind, this week I had an idea - The words "Protein" and "Brownies" were running in my head. So I went to the kitchen and started experimenting. So here's my protein recipe called "Choco-Coconut Protein Brownies"...

The list of ingredients:

1/2 cup of Coconut flour (I get it at Whole Foods)
2 scoops of Chocolate flavor protein powder
1/4 cup Carob (chocolate substitute with no caffeine, no cacao, I also get it at Whole Foods).
1/4 cup Truvia
1/2 tsp Aluminum-free baking powder
1/4 tsp Sea salt
1 cup of Egg whites
1 large Egg
1/2 cup Unsweetened applesauce
1 tsp Vanilla extract
1/4 cup unsweetened coconut flakes (optional)

You just have to preheat your oven to 350°F and prepare a brownie pan with cooking spray to avoid sticking.
Mix all the dry ingredients and wet ingredients separately. Pour the liquid ingredients over the dry ones and mix well.

Add the batter in your prepared pan and sprinkle with the unsweetened coconut flakes evenly.
Bake for 25 minutes. Wait for the brownies to cool down. Cut into 8 pieces and save them in a ziplock bag and you have something ready for your busy week.

You will definitely think that you are cheating with these delicious protein brownies!
