Chocolate SuperFood Protein BarAnd why do I picked this name (Superfood protein bar)? Because it has a lot of superfoods in the ingredients. They are all natural and are great to help you maintain a healthy weight, fight disease, and of course, live longer.

Some of the ingredients I want to highlight as superfood are:

Zucchini:
From the summer squash family, it is a superfood since it helps with digestion, prevents constipation, lower cholesterol, maintain low blood sugar and blood pressure, great to prevent cancer as it has powerful antioxidants. It is also has an anti-inflammatory properties in it.

Raspberries:
I love using them in my protein shakes, topping for my Greek yogurt and oatmeal as a way to add natural sugar in my meals. This fruit is rich in antioxidants, vitamins and fiber. For one cup, you'll get your vitamin C and potassium (64 calories). As the other berries, these have phytochemicals and flavonoids to help prevent several types of cancer. And did you know that these little guys can help you keep a healthy vision?

Almonds:
Almonds are a great source of healthy fats (monounsaturated). They are also a great source of vitamins and minerals (like vitamin E and magnesium). Another superfood with phytonutrients that will help to keep your heart healthy. You can also get almond flour and almond butter (try to get the unsalted version and put it back if the list of ingredients is long because you only need ALMONDS in the list, nothing else!).

Greek Yogurt:
The best yogurt you can get because it is packed with protein (13 or more grams per serving) so it wins the battle against regular yogurt (which has like 5 grams). This superfood is high in calcium, low in sodium and it is creamier than regular yogurt. There are so many ways you can use this superfood - to top your healthy protein pancakes, your fruits, to make yogurt parfait, in smoothies, and yes, even use it in recipes as a substitute for mayo or sour cream.

Ok, so here is the recipe:

You're going to need...

1 1/2 cup of shredded zuchini
3/4 cup of applesauce: Make sure to find the all natural and unsweeteened version. Ingredients list should be only Apples (and maybe you'll see Citrid Acid, which is naturally found in citrus fruits).
2 tsp pure vanilla extract
3/4 cup of liquid egg whites
1/2 cup of Greek yogurt
2 tbsp canola oil

1/4 cup Truvia
1 tsp baking soda
1 tsp baking powder
1/2 tsp sea salt
1/2 cup of oat flour
1/4 cup carob powder
4 scoops of whey protein (chocolate flavor).

6 oz. of Raspberries
1/2 cup of sliced almonds

Preheat your oven at 350 degrees (F). Mix all of your ingredients in a food processor (except for the raspberries and almonds - you are going to fold these in the batter when it is done).

Spray a 9x13 baking pan with cooking spray.

When your batter is ready, fold in the toppings. Add it to the prepared pan and bake for 35-40 minutes.
